HIGALA Lechon Manok & Liempo

A new player.

They just opened a branch in basak san nicholas, near st. anthony hospital. 

It was their grand opening so i expected the place to have a massive line but perhaps i was a little early. They were offering a promo, a price discount, so people can try. The crew were busy with full rack of chicken and liempo.

Order chicken, you can tell that the chicken was well roasted because of the color and the some marks of burnt black skin, coz in some lechon chicken place you can see just plain golden brown only and most of the time its not fully cooked.

As he was chopping the lechon manok i could see that on the joints it wasnt fully cooked. Too much heat from the charcoal, perhaps due to the grand opening and the massive tray they have to prep.

Back home and the taste test. The marinade is good, this is your traditional lechon manok, I mean its not something that has a signature taste. And confirmed some part are close to fully cooked. So you know what im saying, tough raw meat and some redness near the bones.

Days after i was passing by and i saw, they have chicken neck, which was good, it's one of my faves, so i bough some to test and also noticed they sell half a chicken which was good. 

Arrived home and the taste test. Dry and tasted stale, you can taste a fresh oil from a stale one. Cant even take another bite. And it was dry like fried chicken rather than lechon chicken.

I dont know if i will try this again the chicken and the neck, perhaps half chicken and the liempo and a neck, just to give it a try again to see.
